Spring has sprung, and so has our brand-new menu bursting with vibrant flavours and seasonal delights! We’re excited to unveil a line-up of dishes crafted to celebrate spring. From fresh seafood to delectable vegetarian options, there’s something for everyone. We take pride not only in our dishes but also in the input of our dedicated staff. So we turned to our hospitality team to discover their personal favourites. Additionally, our team have expertly selected Ridgeview sparkling wine pairings to complement each dish. What a treat!

Sticky Jerk Lamb Kebabs

Steph, our Hospitality Assistant Manager, adores our sticky jerk lamb kebabs. These succulent kebabs are paired with mango salsa and whipped orange & honey Sussex goat cheese, creating a dish that perfectly embodies the vibrant flavours of spring. Steph highly recommends enjoying our kebabs with a glass of Rosé de Noirs to elevate the experience even further.

Local Fish of the Day and 'Frickles'

Ellie from our front-of-house team can’t get enough of our Local Fish of the Day with roasted cherry tomato sauce and chilli garlic oil. Ellie pairs the dish with our Blancs de Blancs. Trust us, the flavours of honeysuckle, brioche, biscuit, and lemon in this wine will make the fish dish sing! 

Then there’s Cas, who’s obsessed with our ‘Frickles’ – beer-battered pickles with Brighton Blue Cheese dip. She insists you try them with a glass of Bloomsbury. It’s light, refreshing, and has hints of lemon, green apple, and melon that go perfectly with our tangy frickles.

Green Pea & Herb Orzo or Hasselback Aubergine?

Olivia’s go-to is our Green Pea & Herb Orzo with roasted maple cauliflower and pickled chili. She recommends pairing it with a glass of Cavendish. The notes of pear, red apple, and red berry flavours enhance the fresh, herby goodness of this vegan dish.

Last but not least, Tieghan’s pick is our Hasselback Aubergine with Bute Island ‘Greek Sheese,’ chilli jam, and sticky red onions. For her, nothing beats enjoying it with a glass of Fitzrovia Rosé. With its bursts of citrus and red currant, it’s the perfect match for the savoury, spicy flavours of our aubergine dish.
